*Baby Kale Salad with Roasted Chickpeas, Lemon and Parmesean *

For the Roasted Chickpeas
1 (15 oz) can chickpeas, rinsed and drained
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

For the Salad
1 tablespoon freshly squeezed lemon juice, from one lemon
3 tablespoons extra virgin olive oil
1 small garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 pound baby kale
1/2 cup shaved Parmigiano-Regianno
Instructions

Preheat oven to 425° F. Line a baking sheet with aluminum foil.
Place the chickpeas on the prepared baking sheet and toss with the olive oil, salt and pepper. Roast for 10-12 minutes, stirring once, until the chickpeas are slightly shrunken and crispy. Let cool.
In a large bowl, combine the lemon juice, olive oil, garlic, salt and pepper. Add the greens and toss until evenly coated. Taste and adjust seasoning if necessary (I usually add a bit more salt). Arrange on plates and top with Parmigiano-Regianno shavings and crispy roasted chickpeas.

Hello!

The changing of the clocks has us all thinking spring! It is harder to come in at the end of these beautiful days as the light lingers longer.
This spring has been a whirlwind – crazy warm temperatures that have everything about 3 weeks ahead of schedule, and then a real freeze in the middle of the week. Hopefully the crops and all their tender new growth with get through!

We remain on an every other week schedule, so make sure you stock up on eggs, meats and veggies until we see you again. We’ve got lots of greens this week – spinach and baby kale especially. These make great salads as well as cooking greens – throw them in frittatas or in soups. They keep well too so buy a few bags! We also have great flowers this week that are just bursting with color and joy!

Thanks so much for all your continuing support. We really love and appreciate out customers, and are grateful to you for enabling us to do what we do! Our best advertisement is your word of mouth, so this spring as people are considering CSA’s, please let them know about Fresh Harvest! The Veggies are 4-packs and are cool-weather vegetable plants including several Lettuces, Broccoli, Cauliflower, Kales, and Spinach. The Herbs are in quart pots and include Dill, Cilantro, Lavender, and Chamomile. Plant now and they’ll be ready to eat as soon as 3 weeks depending on variety.

Good Morning Market family!

Rocky Glade Farm is back and brings a new variety of Kale- Casper is a good all purpose kale that is lighter green, slightly curled, but has a unique white center making it perfect for raw kale applications where its beauty can be shown off! Of course you can cook it too!

Seeds of Success returns this week with all your favorites!

Double Star Bar Farm won’t have bread for a few more weeks but Maura brings us shitakes! YUM with some kale soup :)

White City Produce & Greenhouse will be away until around the beginning of April.

Botanical Harmony Farm will have Benjamin’s alfalfa and broccoli, and a couple of zesty sprouts this week. Thank you for your support of our growing sprout business as we work out timing/growing and packaging kinks!

Even through the winter, our market continues to bring quantity and, most important, quality! Thank you for your continued support of this type of farmers market. We appreciate you so much!

Don’t forget that we can deliver to your door! Select delivery and add to your cart just as you would any product check that your address is correct in the system, set a cooler out and we will deliver during the normal pickup hours on Wednesday.
