<p>Another amazing way to eat fresh tomatoes! In honour of our Spanish help-x guest.<br /> Easy to blend a batch and keep in your fridge. The flavours develop the longer you chill it.</p>

Serves: 4
Vegan!

Ingredients
1 slice dry, stale bread
1.5 lb ripe tomatoes
1 small cucumber
1 small red onion
3 cloves garlic, minced
1 green bell pepper
2 tablespoons sherry vinegar
3 tablespoons extra virgin olive oil

Step by Step Instructions
  1. Soak the bread in a small amount (few tablespoons) of water for 1 minute. Gently remove and “squeeze” dry.
  2. Coarsely chop all your vegetables and place in a blender. Add the oil and vinegar. Add salt and pepper to taste. Blend for 1 minute or until smooth.
  3. Refrigerate for at least 1 hour.
