Lemon-berry Sauce

Serves: About 1 cup of sauce
Vegetarian!

Ingredients
2 tsp. fresh lemon thyme leaves*
1 1/2 cup fresh raspberries, blueberries, blackberries
1 T. honey
1 T. freshly squeezed lemon juice

Step by Step Instructions
  1. Place lemon thyme in a mortar or small bowl, and bruise it with a pestle or wooden spoon to release its fragrance.
  2. Place 1/4 cup of the berries in a larger bowl, and mash them together with the lemon thyme.
  3. Add the honey, lemon juice, and remaining berries. Stir gently to coat with sauce. * For a pretty garnish, save back a couple of lemon thyme sprigs.
