Sauteed Spinach

<p>Easy, great tasting side dish. You can substitute chard if you wish.<br /> Sometimes I stir this into the sauce for chicken picata or over a Spanish omlette.</p>

Vegetarian!

Ingredients
2 orders Helen's spinach
2 Tbsp. olive oil
2-4 cloves garlic, depending on size and taste
salt to taste
freshly ground pepper to taste
butter
lemon

Step by Step Instructions
  1. Rinse and spin dry spinach. Tear into bite sized pieces.
  2. Heat oil in Dutch oven. Saute garlic for one minute. Add spinach, stir, cover and cook 2 minutes.
  3. Uncover and continue to cook until spinach is completely wilted. sprinkle with salt and pepper. Stir in a little butter.
  4. Place in serving bowl and squeeze a lemon half over the spinach.
