Lamb Chops with Fresh Blueberry Pan Sauce

Ingredients
1/2 cup sweet onion, finely chopped
2 ea garlic cloves
1 ea sea salt
1 ea black pepper, cracked
1 ea fresh thyme, chopped
1 cup blueberries
1/4 cup water
1 tblsp balsamic vinegar
4 ea lamb chops
1 ea mint

Step by Step Instructions
  1. Heat 1 tablespoon oil in large skillet over medium heat. Add onions and cook until reduced by half and beginning to turn golden color, about 5 minutes. Add garlic, a bit of salt and pepper, a pinch of thyme.
  2. Stir until fragrant, about 30 seconds. Add blueberries, 1/4 cup water, and vinegar. Stir to blend. Mash berries with the back of fork and cook until sauce thickens, stirring often, 3 to 4 minutes. Let stand at room temperature.
  3. BBQ lamb chops until desired tenderness and enjoy!
