Zucchini Cakes (not like a sweet loaf)
<p>This is my all.time.favorite.summer.recipe. Great with sour cream or goat cheese on top. I usually dont measure anything and sometimes have less parmesan or less breadcrumbs than needed but it always turns out great!</p>Source: From "Nourshing Traditions" by Sally Fallon (Entered by Anson Hohne)

Step by Step Instructions
- Mix Zucchini with salt and let stand 1/2 hr. Rinse well and squeeze dry in a towel
- Mix with eggs, bread crumbs, cheese, and cayenne pepper, and season to taste. Form into cakes and saute a few at a time in butter and olive oil.
