SHH "Paella" Fried Rice

<p>Remember you absolutely cannot make delicious rice using freshly cooked rice.Cook the rice a day or 2 ahead of making this recipe. Use a long grain rice and cook according to directions on the package. You will need 4 cups of cold cooked rice. You could also purchase the cooked rice from a chinese restaurant.</p> <p>The chorizo sausage is hard to find. Oakview Farms carry ground chorizo in a 1 lb. pkg. I the whole pkg. I have also substituted the chorizo for ground sweet Italian Sausage. However you do not get the same flavor or color that the spices of the chorizo gives to the dish.</p>

Serves: This will serve 6 to 8 people easily.

1/4 cup olive oil
1 tablespoons cumin seeds
1/2 teaspoon dried red pepper flakes.
1 large onion, chopped
1 large bell pepper
2 3 to 4 oz. ea. Spanish chorizo( spicy dried pork sausage) links, quartered, lenghwise and cut into 1/4- inch- thick pieces.
4 cups cold rice
1 10 oz. package of frozen peas
1/2 cup hulled green pumpkin seeds. I substitute sunflower seeds
1 cup cilantro , finelly chopped

Step by Step Instructions
  1. heat oil in a 12" non stick skillet over moderate heat until hot but not smoking, then cook the cumin seeds and red pepper flakes, stirring for 1 minute.Add onion, and bell peppers and cook, stirring, until softened. Add chorzio and saute' over moderately high heat, stirring until the dausage begins to brown, about 3 minutes. Add rice crumbling it. Saute' stirring until until some grains begin to turn golden brown., about 3 minutes. Add peas and saute' stirring just until peas are heated through.Remove from heat and stir in seeds and cilantro. Preparation time from to stop time 35 minutes.
