<p>Made this tonight with Felder Farm spinach &#8211; yum! &#8211; Pretty quick and you can vary ingredients based on what you have available&#8230; It&#8217;s delicious on blue corn chips or spread on cornbread or baguette&#8230;</p>

Serves: depends how you serve it! A good sized bowl of dip or enough spread to accompany a bog meal
Vegetarian!

Ingredients
8 oz fresh spinach
1/2 container ricotta cheese
1 small onion
2 cloves garlic
1 cup miscellaneous cheese!
1 medium red pepper
1/4 cup bread crumbs

Step by Step Instructions
  1. chop onion, garlic, and pepper and saute in olive oil
  2. add chopped spinach and cook until dark green
  3. mix sauteed spinach, onion, pepper, and garlic with cheeses in a small, oven-safe baking dish - top with bread crumbs
  4. cook at 350 degrees for 20-30 minutes - eat hot or at room temp
