Smoky Tomatillo Salsa

Serves: About 1/2 cup of salsa
Vegetarian!

Ingredients
6 tomatillos, husks removed, rinsed
1/4 cup chopped fresh cilantro
2 Tbsp lime juice (one small lime)
2 tsp honey
1 chipotle en adobo
1 garlic clove
1/4 tsp salt

Step by Step Instructions
  1. Preheat grill to medium-high for direct grilling with perforated grill pan.
  2. Place the tomatillos on the grill pan and grill, turning often, until softened and lightly charred, 6-8 minutes. Transfer to a food processor or blender; add the cilantro, lime juice, honey, chipotle en adobo, garlic, and salt; pulse until smooth.
