Vegetarian!

Ingredients
2 Peaches (peeled & halved)
1 3/4 cups Dahi (whole milk yogurt) or Greek yogurt
1 or 2 sprigs Fresh rosemary
OR substitute mint
1 pinch Salt
1 or 2 teaspoons Cardamom Powder
3 or 4 strands Saffron
1 tablespoon Chopped pistachios
1 or 2 tablespoons Honey
OR maple syrup
Additional peach slices for garnish
Additional rosemary for garnish
Additional pistachios for garnish

Step by Step Instructions
  1. Puree the peaches in a food processor.
  2. Whisk the yogurt in a large bowl with a small amount of water to make a creamy mixture. Add small amounts of additional water if needed to create the desired consistency.
  3. Stir the rosemary, cardamom and salt into the yogurt, then stir in the pureed peaches.
  4. Taste and stir in honey or maple syrup to sweeten if desired. If you want to thin out or further chill the mixture, stir in ice cubes.
  5. Pour into glasses and garnish with peach slices, rosemary sprigs, and/or pistachios
