Peachy Chicken

Serves: 4-6 servings


Ingredients
2 cups sliced peaches
2.5 lbs chicken, cut into 1" pieces
1 Tbsp oil
1/4 cup orange juice
1/4 cup rice vinegar
1 Tbsp brown sugar
1 tsp dried basil
1/2 rsp salt
1/4 rsp cloves
1/4 tsp cinnamon
1/8 tsp black pepper
2 Tbsp cornstarch
2 Tbsp water
1 cup Chicken broth
Hot cooked rice

Step by Step Instructions
  1. In a large skillet, heat oil over medium-high heat. Cook chicken until browned on both sides. Combine chicken broth, orange juice, rice vinegar, brown sugar and spices. Pour over chicken. Bring to a boil; reduce heat. Cover and simmer 10-15 minutes or until chicken is cooked through. Add peaches; heat. Combine cornstarch and 2 Tbsp water, stirring until smooth. Stir into skillet. Heat and stir to thicken. Serve over hot cooked rice.
