Fried Shiitake Mushrooms

Ingredients
7 ounces Shiitake mushrooms (cleaned & stemmed)
2 cups Flour
1 Egg
2 teaspoons Garlic powder
1 teaspoon Paprika
1 teaspoon Kosher salt
1 cup Beer (plus more for the batter if needed)
3 tablespoons Fresh chopped thyme (divided)
Salt for seasoning
Canola or peanut oil frying

Step by Step Instructions
  1. Put the flour, garlic powder, paprika and salt into a bowl and whisk until well combined. Add the beer and beaten egg to the dry ingredients a little at a time. You may not need to use the whole cup of beer at this stage.
  2. Stir in 2 tablespoons of chopped thyme, then set the batter aside for 20 minutes to thicken. If the batter becomes too thick, add additional beer.
  3. Halfway fill a deep, sturdy pot with the frying oil of your choice and heat it to 375 degrees. Working in batches, dip the mushrooms into the batter and carefully place them into the oil. (you may use tongs or a fryer basket if you wish)
  4. Let the mushrooms fry for 5 minutes, then place them onto a plate lined with paper towels and season with coarse salt and chopped thyme.
