Smoked Salmon Mac ‘N Cheese

Ingredients
2 cups Macaroni pasta
1 1/2 cups 2% or whole milk
2 tablespoons Unsalted butter
2 tablespoons Flour
4 ounces Grated Gruyere cheese
3 ounces Grated Parmesan cheese
2 ounces Grated mozzarella cheese
1 teaspoon Salt
1/4 teaspoon Pepper
2 cups Smoked salmon (torn into small pieces)
1 cup Coarse bread crumbs
2 tablespoons Chopped fresh basil leaves

Step by Step Instructions
  1. Preheat oven to 400 degrees. Cook the pasta in salted boiling water for 6 minutes.
  2. Heat the milk in a saucepan over medium-low heat. In a separate saucepan, melt the butter and whisk in the flour. Cook over low heat for 2 minutes, whisking continuously.
  3. While still whisking, add the heated milk to the flour mixture, then continue whisking continuously for 2 more minutes. Remove the saucepan from the heat and add the cheeses, salt, and pepper. Add the noodles and salmon and gently toss to combine.
  4. Put the mac & cheese mixture into a greased baking dish or cast iron skillet. Mix the breadcrumbs & basil together, then sprinkle the mixture over the top of the pasta. Bake for 35 to 40 minutes.
