Smoked Okra Dip

Ingredients
8 Okra pods
2 tablespoons Olive oil (plus a bit more for drizzling)
1 Shallot (diced)
1/2 teaspoon Crushed red pepper flakes
Salt & pepper to taste
8 ounces Cream cheese
1/3 cup Plain yogurt
2 tablespoons Mayonnaise (optional)
1 teaspoon Mild hot sauce
3/4 cup Shredded smoked Gouda cheese (divided)
1/2 cup Shredded mozzarella cheese
Paprika to taste
Chips (for serving)
Toasted baguette slices (for serving)

Step by Step Instructions
  1. Preheat oven to 400 degrees and prepare either two 8 ounce or one 16 ounce ramekins. Trim the okra and slice them in half lengthwise then widthwise.
  2. Heat a saute pan over medium heat, add the olive oil and once it's warmed add the shallots and let them cook for 3 minutes stirring often
  3. Add the crushed red pepper flakes, okra, salt, and pepper. Cook for 3 to 4 minutes, still stirring often.
  4. Stir the cream cheese, yogurt, mayonnaise (if using), hot sauce, 1/2 cup of smoked Gouda, the mozzarella, and more salt and pepper.
  5. Fold in the okra & shallots, then transfer the mixture to the prepared ramekin/s
  6. Sprinkle the top/s with the remaining Gouda and with paprika and bake for 10 to 12 minutes.
