Slow Cooker Braised Beef and Peaches

Serves: 6 servings


Ingredients
1 bone-in beef roast (3-4 lbs)
2 Tbsp flour
1 Tbsp olive oil
salt and pepper, to taste
2 onions, diced
4 carrots, peeled and cut into large pieces
4 potatoes, peeled and cut into large pieces
2 cups apple juice or beef stock
1 cup brown sugar
1/2 cup molasses
1/2 cup ketchup
4 peaches, quartered
2 tsp thyme leaves, dried or fresh

Step by Step Instructions
  1. Coat the beef roast in flour and then sear meat on each side until browned in an oiled skillet over high heat. Season with salt and pepper; place meat in a slow cooker.
  2. In the same skillet, fry the onions for about 3 minutes. Add to the slow cooker along with the carrots and potatoes. Add apple juice or beef stock, brown sugar, molasses and ketchup to the skillet and mix until smooth. Pour the liquid into the slow cooker. Add thyme or other herbs as desired.
  3. Cook on low for 8 hours. Add peach slices and continue cooking on high heat for 30 minutes.
