Fresh Peach Salsa

<p>Give a fresh twist to your tacos or nachos with this spicy/sweet summer salsa.</p>

Serves: 3-4 cups
Vegetarian!

Ingredients
3 large, ripe peaches, diced into 1/2" pieces
1/2 medium red onion, very finely diced
1/2 bell pepper, finely diced
1 medium tomato, finely diced
1 jalapeno pepper, very finely diced
1/4-1/2 cup chopped cilantro
1/4 cup fresh lime juice (1-2 limes)
1/4 tsp salt (to taste)
1/4 tsp ground black pepper (to taste)
1/4 tsp chipolte powder (optional - will add a "pleasantly smokey" taste

Step by Step Instructions
  1. Dice peaches, tomato, onion, bell pepper, jalapeno, and cilantro and add to a medium bowl. Add lime juice, salt and pepper; gently toss to combine.
  2. Taste, and adjust to your preferences. If desired, add chipotle powder, starting with a conservative amount of 1/4 tsp.
  3. Serve with chips, in tacos, or over fish or grilled chicken. The website says, "This peach salsa would be a nice addition to burrito bowls. Or you could even make bruschetta out of it."
