Thyme-Encrusted Triggerfish

Ingredients
4 Triggerfish fillets (skinless)
1/2 teaspoon Salt
1/4 teaspoon White pepper
4 tablespoons Fresh thyme (chopped)
2 tablespoons Canola oil
2 tablespoons Butter

Step by Step Instructions
  1. Lightly season the fillets with salt & white pepper. Sprinkle the tops with thyme leaves and press them down gently so the leaves adhere.
  2. Heat the canola oil in a skillet, then add the butter and let it melt.
  3. Put the fillets into the skillet top sides down and saute them for 5 minutes. Flip them over and cook until done.
