Asparagus and Corn Fritters

Vegetarian!

Ingredients
1/2 a bunch of Asparagus (trimmed & sliced)
3/4 cup Corn
Olive oil for cooking
2 Eggs (beaten)
3/4 cup Shredded pepperjack cheese
1/4 cup Flour
Salt to taste

Step by Step Instructions
  1. Saute the asparagus and corn in olive oil in a skillet over medium-high heat for 5 minutes.
  2. Put the asparagus & corn into a bowl and once cooled stir in the beaten eggs, the cheese, the flour, and the salt.
  3. Heat 2 tablespoons olive oil in the skillet over medium heat. Drop the batter into the skillet in 2 tablespoon increments. Flatten the batter and cook the fritters for 3 minutes on each side. Repeat in batches until the batter is gone.
