Java Roast Beef

Ingredients
5 cloves Garlic (minced)
1 1/2 teaspoons Salt
3/4 teaspoon Pepper
3 or 3 1/2 pounds Boneless chuck roast
1 1/2 cups Strong brewed coffee
2 tablespoons Cornstarch
1/4 cup Cold water
Side suggestions include:
Bread
Mashed potatoes
Asparagus
Broccoli
Brussels sprouts

Step by Step Instructions
  1. Mix the garlic, salt, and pepper together and rub the mixture over the roast. Put the roast into a 4-qt. slow cooker.
  2. Pour the coffee around the roast, cover it, then cook on low for 8 to 10 hours.
  3. Pull out the roast and set it aside. Pour the cooking juices into a saucepan and skim off the fat that rises. Bring to a boil
  4. Mix the cornstarch and water in a bowl until smooth, then gradually stir it into the cooking juices. Bring to mixture to a boil again and cook for 1 or 2 minutes to thicken.
  5. Serve the roast with gravy and sides of choice!
