Scrambled Eggs with Smoked Salmon

Ingredients
1/4 pound Sliced smoked salmon (divided)
12 Eggs
1/2 cup Heavy cream
Salt, pepper, and any other seasonings to taste
2 tablespoons Butter
12 to 15 blades Fresh chives (finely chopped) (divided)

Step by Step Instructions
  1. Pull aside 2 slices of salmon for garnish, then chop the remaining salmon into very small pieces.
  2. Whisk the eggs and cream together, add 1/2 of the chopped chives, and season to preference.
  3. Heat a nonstick skillet over medium heat, then melt the butter and add the egg mixture. Scramble the eggs with a spatula or wooden spoon, then serve garnished with the retained smoked salmon & remaining chopped chives.
