Honey and Bee Pollen Granola

Ingredients
2 cups Oats
1 cup Unsweetened coconut flakes
1 cup Sliced nuts (original recipe uses almonds)
1/4 cup Flaxseed
3 tablespoons Coconut sugar
1 teaspoon Salt
1/2 cup Coconut oil (melted)
1/2 cup Honey
1 teaspoon Vanilla extract
1/4 cup Bee pollen
For serving:
Milk
OR yogurt

Step by Step Instructions
  1. Preheat oven to 350 degrees. Toss the sliced nuts, coconut flakes, flaxseed, coconut sugar, cinnamon, and salt together in a bowl.
  2. Whisk the warm melted coconut oil with the honey & vanilla extract. Pour the liquid mixture over the bowl of dry goods, then toss again to coat.
  3. Line a baking sheet with parchment paper, spread the granola out evenly, then bake for 15 minutes, toss, then bake for 10 more.
  4. Remove the granola from the oven, sprinkle in the pollen, and toss to mix it in. Place a layer of parchment paper over the granola and press it down lightly.
  5. Once cooled, enjoy the granola by itself, with milk as cereal, or over yogurt.
