Candied Lemon Peels

Ingredients
3 Lemons
8 cups Cold water (possibly more if needed, divided)
2 cups White sugar

Step by Step Instructions
  1. Cut the lemon into 1/4 inch thick rings, then remove the fruit pulp (retain for other uses, if desired). Cut the rings in half to make long strips to work with.
  2. Put the water and lemon rind strips into a pot and bring it to a boil. Drain the water, and repeat twice more.
  3. In a new pot, combine the sugar with 2 cups of water. Bring to a boil, and stir to dissolve the sugar. Reduce to low heat, then stir in the lemon peels. Simmer until the white pith is translucent.
  4. The peels may either be stored refrigerated in syrup, or dried, tossed with additional sugar, and stored in an airtight container.
