Tricolor Sweet Potato Kugel

Serves: 8 cups
Vegan!

Ingredients
6 cups Peeled & grated sweet potatoes (orange & purple varieties)
3 tablespoons Chia seeds OR ground ground flaxseeds
3/4 cup Grated onion
1/4 cup Potato starch or matzo meal
Salt & pepper to taste
1 pinch Crushed red pepper flakes (optional)
6 sprigs Fresh dill (snipped)

Step by Step Instructions
  1. Preheat oven to 400 degrees. Press the grated sweet potato in a strainer to remove excess liquid, then set aside.
  2. If using chia seeds, put them into small bowl with 1/2 cup of water. Let sit for 10 minutes, stirring occasionally.
  3. While the chia soaks, combine the sweet potatoes, onion, and potato starch in a large bowl, and season to taste. Mix well. Add the soaked chia and mix until well combined.
  4. Pour the mixture into a 9x13-inch casserole dish, cover, and bake for 60 minutes. Uncover, then bake for 30 more minutes. Serve garnished with fresh dill & vegan sour cream.
