Cucumber Bites

Vegetarian!

Ingredients
2 Cucumbers
12 Cherry or grape tomatoes (sliced in half)
4 ounces Cream cheese (softened)
1 tablespoon Mayonnaise
3 tablespoons Ranch dressing
1 tablespoon Fresh dill (finely minced)
1/4 teaspoon Garlic salt
1/4 teaspoon Italian seasoning
sprinkle of Pepper for garnish
Other topping suggestions include:
Slices of bell pepper
Slices of sweet pepper
Finely chopped jalapeno peppers
Sliced or shredded carrots
Fresh herbs
Sliced green onion

Step by Step Instructions
  1. Wash & peel the cucumbers (discard the ends). Remove a little bit of the center of the cucumber slices (just enough to make a small divot).
  2. Combine the cream cheese, mayonnaise, and ranch dressing. Stir until smooth. Add the fresh dill, garlic salt, and the Italian seasoning to the cream cheese mixture and stir until well combined.
  3. Put the cream cheese mixture into a piping bag (with a star tip). Pipe 1 tablespoon of cream cheese mixture into each cucumber divot.
  4. Top the cucumber slices as desired and garnish with a sprinkle of pepper (if desired), then serve.
