Kale Pakoras

Serves: 24 patties
Vegan!

Ingredients
4 cups Kale (finely chopped, with stems removed)
OR mustard greens
OR turnip greens
OR Collard greens
2 teaspoons Garam masala
2 teaspoons Coriander powder
2 teaspoons Ground cumin
2 teaspoons Turmeric
2 teaspoons Chili powder
1 teaspoon Garlic powder
1 teaspoon Amchoor powder
OR 1 tablespoon lemon juice
1 1/2 teaspoon Salt
2 cups Chickpea flour
1 1/2 or 2 cups Water
1/2 of an Onion (preferably red, finely chopped)
Minced green chilies (to taste, if desired)
Oil for frying
Chutney (for serving, if desired)
Ketchup (for serving, if desired)

Step by Step Instructions
  1. Put the chopped kale (or other greens) into a bowl and press until the leaves have shrunk. Put all of the spices and the salt into the bowl with the kale, then toss to coat. Add the chickpea flour and 1 1/2 cup water. Stir until a batter is formed. Add onion, chilies, and more water if needed.
  2. Heat 2-inches of oil in a large pot to deep fry or about 1/2-inch of oil in a pan to shallow fry. Heat the oil to 350-365 degrees. Shape the batter into patties and fry them for 2 to 4 minutes in batches. Flip the patties over halfway through the frying.
  3. Serve with hot chutney and/or ketchup if desired.
