Papas Chorreadas (Potatoes with Cream and Cheese Sauce)

Serves: 4


Ingredients
8 medium sized Potatoes (preferably red, partially peeled)
1 tablet Chicken bouillon
Water
1 tablespoon Butter
1 tablespoon Vegetable oil
1 1/2 cups Tomatoes (diced)
3 Scallions (cut into 2 inch long pieces)
1/4 teaspoon Garlic powder
1/4 teaspoon Cumin
1/4 teaspoon Salt
Pepper to taste
1 cup Heavy whipping cream
1 tablespoon Fresh cilantro (chopped)
1 cup Mozzarella cheese (shredded)

Step by Step Instructions
  1. Put the potatoes & the bouillon into a saucepan, then add enough water to cover. Bring to a boil and cook for 30 minutes. When time is up, drain & set aside.
  2. While the potatoes cook, heat the oil & butter in a frying pan heated to medium. Cook the onion & tomato (stirring frequently), then add the garlic powder, cumin, salt and pepper, stir again, and cook for 2 more minutes. Add the cream, cilantro and cheese to the pan. Mix well, lower the heat, and cook for 3 more minutes.
  3. Put the potatoes into a serving dish, then pour the cheese sauce over them. Serve while hot.
