Rosemary Mashed Potatoes

Ingredients
4 pounds Potatoes (peeled & quartered)
1 1/2 teaspoons Salt (divided)
3/4 cup Heavy cream
1/4 cup Butter (cubed)
1/2 teaspoon Fresh rosemary (minced)
1/4 teaspoon Nutmeg
1/4 teaspoon Pepper

Step by Step Instructions
  1. Put the prepared potatoes into a Dutch oven and season with 1 teaspoon of salt. Add enough water to cover, then bring to a boil. Reduce the heat, cover, and simmer for 15 to 20 minutes.
  2. Drain & discard the water.
  3. Put the potatoes, heavy cream, butter, rosemary, nutmeg, pepper and remaining salt into a bowl. Mash until the mixture achieves a desirable consistency. Serve as a side.
