Jalapeno-Lime Honey Glazed Carrots

Ingredients
4-6 medium sized Carrots (greens cut off)
2 teaspoons Olive oil
2 teaspoons Honey
1 small Jalapeno (seeded & chopped)
Lime juice from 1 lime
1/4 teaspoon Lime zest (optional)
Pinch of salt
Fresh chopped cilantro (for garnish, optional)

Step by Step Instructions
  1. Preheat oven to 400 degrees. Prepare a baking pan with non-stick cooking spray.
  2. Whisk the oil, honey, jalapeno, lime juice and zest, and salt together in a bowl.
  3. Lay out the carrots in a single layer on the baking pan. Pour the oil mixture over the carrots and bake for 25 to 35 minutes. Garnish with cilantro, then serve.
