Step by Step Instructions
- Preheat oven to 375 degrees, and prepare a baking sheet with parchment paper.
- Remove the top of the butternut squash and cut the neck into thin slices with a mandolin slicer (note: you can remove the skin prior to this step, but it is not required that you do so). Rub the slices with the oil.
- Lay the slices out on the baking sheet in a single layer and not overlapping. Sprinkle with salt, herbs, and any other additional spices you desire. Bake for 20 to 25 minutes, serve with dip if desired.
