Savory Loaded Sweet Potato Skins

Serves: 8 skins


Ingredients
4 small Sweet potatoes
2 tablespoons Olive oil
3 to 4 ounces Cheese (grated or crumbled)
2 strips Cooked bacon (crumbled)
1/4 cup Chopped green onion
1/4 cup Plain yogurt
OR sour cream
Sea salt

Step by Step Instructions
  1. Preheat the oven to 400 degrees. Cut the sweet potatoes in half lengthwise. Place the potatoes on a baking sheet and bake for 30 to 40 minutes (cut side up). Remove the potatoes from the oven and allow to cool. Scoop out most of the potato flesh and store it for other uses.
  2. Flip the potatoes over and brush them with olive oil & sea salt. Bake for 10 minutes, Flip and brush the insides with oil & salt, then bake for 10 more minutes.
  3. Sprinkle cheese and bacon into the potato skins and bake for 2 to 3 minutes in the oven. Remove and top with sliced green onions and plain yogurt (or sour cream).
