Ginger Sesame Cucumbers

Vegan!

Ingredients
1 1 inch piece Fresh ginger (peeled)
1 Cucumber
1/2 of a Sweet onion (thinly sliced)
1/4 cup Apple cider vinegar or rice wine vinegar
3 tablespoons Packed brown sugar
3 tablespoons Soy sauce
2 tablespoons Olive oil
1 tablespoon Toasted sesame oil
1 teaspoon Salt
1/2 teaspoon Crushed red pepper flakes

Step by Step Instructions
  1. Slice the ginger thinly, then stack them up and cut them into even thinner matchsticks. Cut the cucumber in half lengthwise, then slice it into thin half-moon shapes.
  2. Place the ginger, cucumber and the onion in a medium bowl. Add the vinegar of choice, the brown sugar, soy sauce, olive oil, sesame oil, salt, and crushed red pepper flakes and toss to mix.
  3. Cover the mixture and refrigerate it for 1 hour. Serve cold.
