Crispy Sautéed Purple Sweet Potatoes

Serves: 4

1 large Purple sweet potato
1 tablespoon Ghee or butter
Sea salt (to taste)

Step by Step Instructions
  1. Peel the sweet potato and cut it into 1/2 inch x 1/2 inch cubes.
  2. Heat the ghee or butter in a pan at medium heat. Once hot, add the sweet potato cubes, turning every few minutes.
  3. When the potato cubes are golden on the outside and a vibrant purple on the inside, they are ready to serve. Salt to taste and serve once they have cooled slightly.
