Lomo Saltado Recipe (Peruvian Beef Stir Fry with French Fries)

Step by Step Instructions
- Whisk the olive oil, soy sauce, vinegar, garlic, cumin and salt and pepper together in a large bowl. Slice the steak into small pieces, then set them into the marinade and set aside. (Marinate for at least 10 minutes)
- Put the potato slices into a large bowl of cold water and let them soak for at least 10 minutes. Heat the olive oil in a large pan or wok, season the fries with salt and/or pepper and cook for 10 to 15 minutes then set aside.
- Heat 1 tablespoon of olive oil over medium-high heat in the same pan the fries were cooked in. Add the onion & peppers and stir fry for 2 minutes. Drain (but retain) the marinade and add the steak to the pan. Cook for 3 to 4 minutes.
- Add the marinade & the tomato to the pan and cook for 1 more minute. Add the fries, cilantro, and hot sauce and stir fry to heat through. Serve with rice, hot sauce, additional cilantro, and chili flakes.
