Lomo Saltado Recipe (Peruvian Beef Stir Fry with French Fries)

Ingredients
FOR THE STEAK & MARINADE:
1 pound Flank steak
OR Skirt steak
OR ribeye steak
3 tablespoons Olive oil
2 tablespoons Soy sauce
1 tablespoon White vinegar
3 cloves Garlic (minced)
1 teaspoon Cumin
Salt & Pepper to taste
FOR THE FRENCH FRIES:
8 ounce Potato (sliced into fries)
OR prepackaged fries
2 tablespoons Olive oil
Salt & Pepper to taste
FOR THE LOMO SALTADO:
1 tablespoon Olive oil
1 Onion (preferably red)
1 Aji amarillo pepper (sliced)
Or other types of peppers (sliced)
1 large Tomato (sliced)
3 tablespoons Fresh chopped cilantro
FOR SERVING:
Cooked rice
Hot sauce
Fresh chopped cilantro
Chili flakes

Step by Step Instructions
  1. Whisk the olive oil, soy sauce, vinegar, garlic, cumin and salt and pepper together in a large bowl. Slice the steak into small pieces, then set them into the marinade and set aside. (Marinate for at least 10 minutes)
  2. Put the potato slices into a large bowl of cold water and let them soak for at least 10 minutes. Heat the olive oil in a large pan or wok, season the fries with salt and/or pepper and cook for 10 to 15 minutes then set aside.
  3. Heat 1 tablespoon of olive oil over medium-high heat in the same pan the fries were cooked in. Add the onion & peppers and stir fry for 2 minutes. Drain (but retain) the marinade and add the steak to the pan. Cook for 3 to 4 minutes.
  4. Add the marinade & the tomato to the pan and cook for 1 more minute. Add the fries, cilantro, and hot sauce and stir fry to heat through. Serve with rice, hot sauce, additional cilantro, and chili flakes.
