Satsuma Salad

Serves: 2-4
Vegan!

Ingredients
Zest from 1 lime
Juice from 1 lime
1 teaspoon Agave nectar
OR honey
1 1/2 tablespoons Olive oil
2 tablespoons Fresh mint leaves (rinsed, dried, & roughly chopped)
2 tablespoons Fresh basil leaves (rinsed, dried & roughly chopped)
2 tablespoons Fresh cilantro leaves (rinsed, dried & roughly)
8 Satsumas
Salt & pepper

Step by Step Instructions
  1. Combine the lime zest, lime juice, and agave or honey in a mixing bowl. Slowly add the oil, whisking constantly. Add salt & pepper to taste. Stir in the mint, basil, and cilantro leaves.
  2. Peel the satsumas and slice them horizontally. Mix the slices in with the dressing and chill before serving.
