Spinach Dip

<p>A perfect dip for appetizers that is simple to prepare and uses locally grown spinach! You can serve whatever you like as a side for dipping, these are just a few suggestions!</p>

Serves: 2 cups
Vegetarian!

Ingredients
10 ounces Spinach (thawed & drained if frozen)
2 tablespoons Unsalted butter
1 medium sized Shallot (finely chopped)
1/2 teaspoon Paprika
8 ounces Cream cheese
3/4 cup Heavy cream
1/2 teaspoon Salt
1/4 teaspoon Pepper
DIPPING SUGGESTIONS INCLUDE:
Baguette slices
Crackers
Chips
Cucumber slices
Carrot sticks
Mild peppers

Step by Step Instructions
  1. Squeeze the moisture out of the spinach leaves with a paper towel.
  2. Melt the butter in a pan over medium-high heat. Saute the shallot for 3 minutes. Stir in the paprika and let it cook for 30 seconds. Add the spinach, cream cheese, heavy cream, salt, and pepper, then cook for 8 to 10 minutes.
  3. Serve with bread, crackers, chips, or veggies of your choice!
