Pressure-Cooker Raisin Nut Oatmeal

Vegetarian!

Ingredients
3 cups Vanilla almond milk
3/4 cup Steel cut oats
3/4 cup raisins
3 tablespoons Brown sugar
4 1/2 teaspoons Butter
3/4 teaspoon Cinnamon
1/2 teaspoon Salt
1 large Apple (peeled & chopped)
1/4 cup Pecans (chopped)
Honey (for serving, if desired)

Step by Step Instructions
  1. Add the almond milk, oats, raisins, brown sugar, butter, cinnamon, and salt to a 6 quart electric pressure cooker. Lock the lid and close the pressure release valve. Set on high for 5 minutes, and let the pressure release naturally. Press cancel.
  2. Stir in the apple and let the mixture stand for 10 minutes to thicken.
  3. Spoon the oatmeal into bowls and sprinkle with pecans and, if desired, honey.
