Pickled Banana Peppers

Vegetarian!

Ingredients
6 or 7 Banana Peppers
1 cup White vinegar
1 cup Water
1 tablespoon Pickling salt
1 clove Garlic (smashed)
1 tablespoon Honey
1 teaspoon Dried oregano
1 teaspoon Dried basil
1 teaspoon Black peppercorns

Step by Step Instructions
  1. Slice the peppers into rings and discard the stems. Set aside.
  2. Add the vinegar, water, salt, garlic, honey, oregano, basil and peppercorns to a large pan. Quickly bring the mixture to a boil, then add the pepper rings.
  3. Remove the pan from heat and stir thoroughly. Pour the mixture into several small jars or one large jar. Refrigerate for 24 hours before use.
  4. Use as a topping for salads, sandwiches, or any other dish you feel could use a little more flavor!
