Serves: 4

1/2 cup Fresh parsley (finely chopped)
1/2 cup Fresh cilantro (finely chopped)
2 tablespoons Lemon juice
1 tablespoon Fresh oregano (finely chopped)
1 tablespoon Honey
1/2 teaspoon Crushed red pepper
6 tablespoons Olive oil (divided)
2 teaspoons Salt (divided)
1 teaspoon Pepper (divided)
1 1/4 pounds Skinless boneless chicken thighs (cut into 1 inch strips)
12 ounces Asparagus (cut into 1 1/2 inch pieces)
2 Lemons (seeded and sliced)

Step by Step Instructions
  1. Stir together the parsley, cilantro, lemon juice, oregano, honey, red pepper, 5 tablespoons of the oil, 1 teaspoon of the salt, and 1⁄2 teaspoon of the pepper in a bowl. Add the chicken thighs and toss to coat. Chill for 1 hour.
  2. Preheat your grill to 400 to 450 degrees. Toss the asparagus and lemon slices with the remaining 1 tablespoon of oil. Remove the chicken from the marinade and discard the marinade.
  3. Thread the chicken, asparagus, and lemon slices onto 8 8-inch skewers (folding pieces to fit if necessary). Sprinkle with remaining salt & pepper, and place the kebabs on a greased grill grate.
  4. Grill for 12 to 14 minutes, turning occasionally.
