Fresh Sausage and Broccoli Rabe

Serves: 6 hearty eaters

2 Pounds Fresh sausage, sliced
1-2 Bunches Broccoli Rabe, chopped
I Large Onion, chopped rough
5 Cloves Garlic, chopped
1/2 - 1 Lemon, zest and juice
3 Tbsp Red wine vinegar
Salt to flavor

Step by Step Instructions
  1. Heat bacon drippings or other fat in a large skillet. After chopping your onion and garlic, sauté together over medium heat until tender.
  2. Add sliced pork to the skillet and brown on all sides.
  3. Toss in broccoli Rabe. Drizzle in lemon juice and red wine vinegar.
  4. Allow to sit until broccoli Rabe is tender.
  5. For a spicier dish, use red pepper flakes.
  6. Enjoy.
