Rabbit Gumbo

Serves: 4-6


Ingredients
1 Onion (chopped)
1 Bell pepper (chopped)
1/4 cup Oil
3 pounds Dressed rabbit (cut into pieces)
1/2 pound Smoked sausage (halved and cut into pieces)
1 teaspoon Salt
1/2 teaspoon Dried thyme
1/4 teaspoon Pepper
1/4 teaspoon Cayenne pepper
1/2 cup Okra (sliced)
Cooked rice for serving

Step by Step Instructions
  1. Saute the onion and bell pepper in a Dutch oven in oil until they are tender. Add the rabbit and pour in enough water to cover it. Cover the Dutch oven and let it simmer for 1 1/2 to 2 hours.
  2. Add the sausage, salt, thyme, pepper and cayenne pepper. Let the mixture simmer for 15 to 20 minutes.
  3. Remove the rabbit from the mixture and remove the meat from the bones. Discard the bones. Cut the meat into small pieces and stir it back into the mixture. Stir in the okra and bring the mixture to a boil.
  4. Serve in bowls over rice.
