Rosemary Chicken Hearts

Ingredients
1 pound Chicken hearts (ventricles, veins, and fat removed)
2 tablespoons Salt
1 teaspoon Dried rosemary
1/2 teaspoon Dried thyme
1/4 cup Olive oil

Step by Step Instructions
  1. Rinse the hearts under water to remove ventricles, veins, and fat.
  2. Place the hearts in a bowl, sprinkle the salt over the hearts. Fill the bowl with water until the hearts are barely submerged. Stir the contents and let the bowl sit in the refrigerator for 3 hours.
  3. Remove the bowl from the refrigerator and drain out the water. Add the rosemary, thyme, and olive oil. Return the bowl to the refrigerator for 1 hour.
  4. Heat a frying pan over high heat, add the hearts and the marinade to the pan and cook for about 5 minutes, stirring occasionally. The hearts should be in a single layer in the pan to avoid uneven cooking.
