Lemon Pancakes

Serves: 16 pancakes

2 1/4 cups All purpose flour
2 teaspoons Baking powder
1 teaspoon Baking soda
1/4 teaspoon Salt
1 1/2 cups Buttermilk
1/2 cup Freshly squeezed lemon juice
2 Eggs
2 teaspoons Vanilla extract
3 tablespoons Melted unsalted butter
1/4 cup Sugar
2 tablespoons Lemon zest

Step by Step Instructions
  1. Whisk the flour, baking powder, baking soda and salt together and set aside.
  2. Whisk the buttermilk and lemon juice together and set aside.
  3. Whisk together the eggs, vanilla extract, melted butter, sugar and lemon zest and set aside.
  4. Whisk the milk mixture together with the egg mixture. Carefully fold this mixture into the dry ingredients.
  5. Heat up your griddle or frying pan and grease to prevent pancakes from sticking.
  6. Spoon the batter into a heated frying pan a few at a time and fry until a few air bubbles form. Flip and continue to fry on the second side until both sides are golden. Repeat until no batter remains.
