Sweet Potato Soup

Ingredients
1 cup Chopped celery
1/2 cup Chopped onion
1 tablespoon Oil
3 Peeled and cubed sweet potatoes
3 cups Chicken or vegetable broth
1 Bay leaf
1/2 teaspoon Dried basil (store bought or homemade)
1/4 teaspoon Salt

Step by Step Instructions
  1. Saute the celery and onions in a Dutch oven in the oil until they are tender. Then add all of the remaining ingredients and bring the mixture to a boil over medium heat. Reduce the heat and simmer the soup for 25 to 30 minutes.
  2. Discard the bay leaf and allow the soup to cool slightly.
  3. Blend the soup in a blender (in batches if necessary) until it is smooth. Return the soup to the pot and reheat it before serving.
