Step by Step Instructions
- Saute the celery and onions in a Dutch oven in the oil until they are tender. Then add all of the remaining ingredients and bring the mixture to a boil over medium heat. Reduce the heat and simmer the soup for 25 to 30 minutes.
- Discard the bay leaf and allow the soup to cool slightly.
- Blend the soup in a blender (in batches if necessary) until it is smooth. Return the soup to the pot and reheat it before serving.
