Savory Squash Pancakes

Serves: 2-6

1 cup Grated yellow squash
Or zucchini
1 Green onion, finely diced
1/2 teaspoon Salt
1/2 teaspoon Sugar
1 tablespoon Melted butter
1 Beaten egg
Pepper to taste

Step by Step Instructions
  1. Combine all the ingredients in a large bowl and mix well.
  2. Spoon the batter into a heated frying pan a few at a time an fry until solid and golden brown.
  3. Enjoy!
