Okra Summer Salad

Vegan!

Ingredients
1 pound Okra, cut into 1/2 inch pieces
1 can Black beans, drained and rinsed
1 Ear of corn ( off the cob)
1 Large onion (or multiple smaller ones)
1 pound Cherry tomatoes
3 tablespoons Extra virgin olive oil
Salt and pepper to taste
1 Ripe avocado

Step by Step Instructions
  1. Blanch the okra in boiling water for about 30 seconds, then drain and allow it to reach room temperature. In the meantime, drain and rinse the beans. Cut the okra into 1/2 inch pieces and discard the stems.
  2. In a large bowl, gently toss together okra, beans, corn, olive oil, salt, and pepper.
  3. Chill for 30 minutes, and gently toss the avocado into the mix right before serving.
