Pineapple Drop Cookies

Ingredients
1 Cup Sugar
1/2 Cup Vegetable Shortening
1/2 Cup Crushed Pineapple (Drained)
1 teaspoon Baking Powder
1/2 Cup Sweetened Coconut
2 Cups Unbleached Flour
1/2 teaspoon Salt
1 teaspoon Pure Vanilla Extract
1/4 teaspoon Baking Soda

Step by Step Instructions
  1. Preheat oven to 400 degrees.
  2. Mix in order given and drop by rounded teaspoons onto cookie sheet.
  3. Bake about 10 minutes.
