Foil-baked Lemony Summer Squash

<p>This is an almost ridiculously simple but very delicious way to fix zucchini or other summer squash. It&#8217;s also a great addition to a grilled supper or a meal around the campfire.</p>

Vegetarian!

Ingredients
4 medium zucchini (or other summer squash)
2 T. olive oil
2 tsp. fresh lemon thyme, finely chopped
2 tsp. fresh oregano, finely chopped
1/4 c. Parmesan cheese, freshly grated

Step by Step Instructions
  1. Split squash in half and arrange cut side up on a large sheet of heavy-duty aluminum foil.
  2. Sprinkle with remaining ingredients, then fold foil into a packet around the veggies, and crimp the edges.
  3. Bake for 35 minutes in a preheated 350 degree oven. Alternatively, place packets along the sides of a heated grill, turn now and then, and pierce with a fork to check for doneness. They are ready to serve when the squash is tender.
