Teriyaki Chicken Stew

Serves: 6-8

6 King's Thighs
2 medium Sweet Potatoes, cubed 1" pieces
2 medium Carrots, cubed 1" pieces
1 medium Onion, sliced
1 cup Apricot Preserves
1/2 cup Teriyaki Sauce
1/8 teaspoon Cayenne Pepper
1/2 cup Maple Syrup
1/2 teaspoon Ginger

Step by Step Instructions
  1. Place chicken thighs, sweet potatoes, carrots, and onions in crock pot.
  2. Pour mixture over chicken and veggies and cook 6-7 hrs on low.
  3. Remove chicken and veggies. Thicken juices with 2 tablespoons of water and 2 tablespoons of cornstarch.
