Sauteed Tomatoes, Sausage, and Okra

Serves: 4 servings

6 oz andouille or smoked sausage, thinly sliced
1/2 lb fresh okra, halved lengthwise
2 garlic cloves, thinly sliced
1 Tbsp olive oil
1 lb cherry tomatoes
1 Tbsp cilantro
1/2 tsp salt (scant)
Dash ground black pepper

Step by Step Instructions
  1. Cook sausage, okra, and garlic in oil over medium heat until the sausage is browned and the okra is almost tender. Add tomatoes and cook until beginning to burst; sprinkle with cilantro, salt, and pepper.
