Roasted Potatoes with Spinach

Ingredients
3 medium potatoes, quartered
2 tbsp butter
2 cloves garlic, minced
1 tbsp fresh rosemary, roughly chopped
1/2 tsp sea salt
black pepper to taste
1 cup fresh baby spinach leaves

Step by Step Instructions
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Placed diced potatoes in a single layer in a ceramic baking dish.
  3. Melt butter in skillet over medium heat. Add garlic, and cook until golden in color. Stir in rosemary.
  4. Pour over potatoes and season with salt and pepper.
  5. Roast uncovered for about 30 minutes or until potatoes are fork tender. Remove and toss in spinach leaves. Return to the over for 1-3 minutes or until spinach is wilted.
